Layers, but so quick & simple to make
Base:
1 tbsp maple syrup
1/2 cup cashews
1 tbsp coconut flour
(Before Making Base – Pulse the peanuts into small pieces in the food processor for the topping first before beginning the base & set aside.)
To make base - In a food processor blitz the ingredients for the base. Once combined press into a small square tin lined with baking paper.
Peanut Butter Caramel Layer:
10 medjool dates, soaked & pitted (soaked in warm water for 1hr approx)
1 tbsp coconut oil
1 tbsp maple syrup
4 tspn Collagen (Optional)
2 tbsp peanut butter
¼ cup water
½ tspn vanilla extract
dash of salt
To make the peanut caramel layer In a food processor blitz all ingredients for the caramel until smooth, then smooth over the base.
For The Topping:
¼ cup roasted peanuts (should be pulsed into pieces before starting base)
50g 70% dark chocolate (melted)
To make the topping layer. Sprinkle with peanut pieces then place in freezer for one hour. Cut up, then drizzle with chocolate (can do earlier but chocolate breaks when cutting).
